I love the taste of corn, and to make it sweet is even better.. I always went to this one restaurant back in Ventura ,Ca and they made the most yummiest corn cake ever. Well, I moved from that area, but still wanted that cake... So I decide to try to make it at home.. Not quite the same but now I think mine is better...lol

Ingredients For sweet corn cake

  • 4 lg
    eggs
  • 1 can
    sweetened condensed milk
  • 4 oz
    cream cheese, soften
  • 9
    ears corn on the cob, kernels removed ( about 7 cups)
  • 1/2 c
    flour
  • 1 tsp
    baking powder
  • 1/2 c
    sharp cheese
  • 1/3 c
    jalapeno monterey jack cheese

How To Make sweet corn cake

    Heat oven to 325 F.
  • 2
    Blend first 4 ingredients in a blender: in batches if necessary,until smooth: pour into bowl. Add flour and baking powder: stir with whisk until well blended.

    Pour into 13x9-inch pan spray.

    Bake 1 hour 5 minutes or until top is golden brown and toothpick inserted i center comes out clean.. Cool Completely.
