Well here we go!!! This sounds like the PERFECT PEACH CAKE ever. This is straight out of the June/July issue of "Looking Back" Magazine, Page 21. I simply can't wait for fresh peach season. We have several orchards that sell to the public at the local farmers market.

Ingredients For summer peach cake

  • 2 1/4 c
    flour
  • 1 1/3 c
    plus 2 tbsp sugar, divided
  • 3 tsp
    baking powder
  • 1 tsp
    salt
  • 1/2 c
    vegetable shortening
  • 2
    eggs, i would use large
  • 1/2 c
    milk
  • 1 tsp
    vanilla
  • 5
    unpeeled peaches, sliced 3/4 inch thick
  • 1/4 tsp
    cinnamon

How To Make summer peach cake

  • 1
    Preheat oven to 350* Grease and flour a 10-inch tube pan.

    Combine flour, 1 1/3 cups sugar, baking powder and salt.

    Add shortening, eggs, milk and vanilla, and mix to make thick batter.
  • 4
    Spoon into prepared tube pan.
  • 5
    Arrange peach slices on top of batter in neat rows
  • 6
    Blend remaining 2 TBSP. sugar with the cinnamon; sprinkle this mixture over peach slices.

    Bake for 45 minutes. Serves 8 to 10.
