i love fresh fruit from the orchard, luckily we recently moved and are about 1/2 mile from a wonderful orchard! i had some blueberry compote left over from homemade pancakes last weekend and did not want to waste it so i decided to bake a regular cake and add my own flavors! i also made a special "topping" using cool whip, cream cheese and some of the juice from the blueberries. (pictures to come, currently in oven, smells heavenly)

Ingredients For summer blueberry cake

  • 1 box
    cake mix, any flavor(this depends on your own taste and the fruit being used)i used yellow
  • 1 box
    cheesecake pudding mix
  • 1 c
    fresh blueberries in juice (compote)
  • 2 tsp
    baking soda
  • 1 c
    french vanilla flavored coffee creamer(use this in place of water/oil mix calls for)
  • 1
    tub cool whip
  • 1
    small tub cream cheese

How To Make summer blueberry cake

    preheat oven according to box. grease a 13x9 baking pan/dish. gather ing according to box, including extra's

    Sift dry ing together into large mixing bowl, add wet ing mix according to package. Stir in fresh fruit, stir until just combined, cook to package directions.

    if frosting let cool COMPLETELY
