sugar plum coffee cake

This appealed to me, because in Christmases of old, they talked about "sugar plums". That may have been a candy, but I like to sometimes showcase a recipe, that is a little different--not same old, same old. So, give plums a chance! This recipe is from The Pampered Chef's "Recipes from the Heart Cookbook".

Ingredients For sugar plum coffee cake

  • 1/4 c
    butter, melted
  • 1/2 c
    brown sugar, packed
  • 1 lg
    apple, peeled, cored, and thinly sliced into rings
  • 1 can
    (16.5 ozs) purple plums, drained, halved, and pitted
  • 1/2 c
    walnuts, chopped
  • 1 lg
    egg
  • 3/4 c
    milk
  • 2 c
    buttermilk baking mix
  • 2 Tbsp
    granulated sugar

How To Make sugar plum coffee cake

    Preheat oven to 375°F.

    Melt butter. Pour into a 9 inch square baking pan; tilt pan to evenly coat bottom of pan. Sprinkle evenly with brown sugar. Arrange apple rings in single layer over brown sugar. Place plum half, rounded side down, in center of each apple ring. Place remaining plum halves around apple rings; sprinkle with walnuts.

    In medium bowl, whisk egg and milk. Add baking mix and granulated sugar; stir, until smooth. Spread batter evenly over nuts. Bake 25-30 minutes, or until lightly browned. Cool 5 minutes; invert onto serving plate. Serve warm. Makes 8 servings.
