I found this recipe last year for Sugar Cookie Cake. When I read the ingredients, I knew I just HAD to make it. It is really easy and I just love that it has fresh, sweetened fruit in it. I used the blueberries we hand picked ourselves....OM"Goodness!" Don't you just wish you could reach into your monitor and take a bite? Mmmmmm....so delicious!

Ingredients For sugar cookie cake

3/4 ccold butter
-
2 csugar
-
3 cflour
-
1 1/2 cbuttermilk

1 tspbaking soda

2eggs, beaten
-
1 tspvanilla
-
8 ozcontainer of whipped topping

12 ozmilk
-
blueberries, or fruit of choice
How To Make sugar cookie cake

1Cut cold butter into flour and sugar till resembles coarse crumbs. Reserve 1 - 1 1/2 cups of crumbs for top of cake

2Mix buttermilk and baking soda together and add to remaining crumb mixture.

3Add beaten eggs and vanilla and mix till combined.

4Pour into greased 9x13 in baking pan and sprinkle with reserved crumbs.

5Bake at 350*F for 35-40 minutes, or until cake tester comes out clean. Cool completely.

6Combine vanilla pudding and milk in bowl. Mix until it starts to thicken. Fold in whipped topping till creamy.

7Divide cake into squares, cutting each piece horizontally. Put a spoonful of pudding mixture and a spoonful of fruit on bottom. Put top on and repeat. ENJOY!
