streusel blueberry muffins
This delicious muffin recipe can be alternately used to make a cake if desired. Or use to make mini muffins. Very easy to make and the topping compliments the fresh blueberries.

3 Tbspvegetable shortening

1 csugar

1 lgegg

1¾ call purpose flour

2 tspbaking powder

½ tspsalt

1 cmilk

1½ cblueberries, fresh
How To Make streusel blueberry muffins

1Make streusel topping by mixing together with a spoon ½ cup flour, ½ cup sugar, 1 tsp cinnamon and 2 tbsp soft butter. Set aside.

2Cream shortening with sugar. Beat in egg.

3Sift flour, baking power and salt together. Add milk.

4Sprinkle the blueberries with flour and stir into the batter.

5Using 12 to 18 muffin tin, pour batter into each cavity.

6Sprinkle streusel topping made in step 1 onto batter.

7Bake at 350° F for 25 - 30 minutes
