This cake came about from people commenting on the margarita cake I had submitted and wondering how it would taste with strawberries instead. Here is my version of it.

This strawberry cake is fun! The strawberry daiquiri mix gives this cake a nice punch of strawberry flavor. The glaze adds a sweetness to every bite. It's a wonderful addition to any dessert table.

Ingredients For strawberry daiquiri cake

  • 1 box
    white cake mix
  • 1 box
    (3.4 oz) vanilla instant pudding
  • 1 can
    frozen strawberry daiquiri mix (thawed)
  • 4
    eggs
  • 1 stick
    butter (softened)
  • 1/4 c
    strawberry puree (made from frozen sliced strawberries in sugar, pureed in blender)
  • GLAZE
  • 1 1/2-2 c
    powdered sugar (sifted)
  • 1 Tbsp
    butter (melted)
  • 2 Tbsp
    (or more depending on desired thickness) strawberry puree

How To Make strawberry daiquiri cake

    Preheat oven tp 350°. Grease & flour a bundt type cake pan. (I use Bakers Joy.)

    Cream butter & add eggs one at a time. Add daiquiri mix & strawberry puree (see note). Mix well.

    Add cake, pudding mixes & mix well.

    Pour into prepared pan & bake for 45 - 50 min or until done.

    Let cool about 15 minutes before turning out onto plate. Let cool about another 10 minutes before glaze is added.

    Glaze: Stir powdered sugar, melted butter & strawberry puree together (1 Tbsp @ a time) until desired thickness. Drizzle over still warm cake.

    *Note* Completely thaw frozen sliced strawberries & mix in blender until pureed.
