Every possible Friday night my husband and I, along with our friends get together for game night. A night to eat, drink, and laugh. To forget about the work week and jump-start the weekend. We are all transplants from other states (being all the guys are former or current Marines). So we are each other's extended family. I started making drunkcups - an adult-style cupcake. Perfect for that after-dinner/pregame snack. If you want a little extra rum in the cakes, take a small bowl and fill it with rum. Before icing the cakes dip the tops of each one in the rum. It gives it just that extra kick.

These are a yummy little cupcake that mimics the flavor of a strawberry daiquiri. The cupcake is made from a simple strawberry cake mix jazzed up with rum. It adds a little punch of rum flavor, but it's not overpowering. The homemade strawberry frosting helps with the daiquiri feel. Adding rum and daiquiri mix to the simple buttercream elevates the flavors. Soaking frozen strawberries in rum and topping each cupcake is a delicious final touch, and gives these cupcakes the feel of a frozen drink. Make sure to add the strawberries just before serving so they do not bleed into the frosting. Perfect for any summer barbecue, pool party, or gathering.

Ingredients For strawberry daiquiri drunkcups

  • 1 box
    strawberry cake mix
  • 1 - 3 lg
    eggs (depending on box)
  • 1/4 - 1/2 c
    oil or butter (depending on box)
  • 1/2+ c
    rum, divided
  • 1 bag
    frozen strawberries
  • 1 1/4 c
    strawberry daiquiri mixer, divided
  • 6 - 8 c
    confectioners' sugar
  • 1 3/4 stick
    unsalted butter, softened

How To Make strawberry daiquiri drunkcups

  • Add cake mix, eggs, and oil to a bowl.

    Preheat the oven as directed on the box. Add the correct amount of butter/oil and eggs as directed on the box.
  • Replace 1/4 cup of the water with rum.

    Replace 1/4 cup of the water the box calls for with 1/4 cup of rum.
  • Add rum and strawberry daiquiri mix to cake batter.

    Add the mixture and 1 cup strawberry daiquiri mix to the cake batter and blend well.
  • Spoon mix into cupcake tins.

    Spoon the cake mix into a lined cupcake tin. You should be able to get 22 - 24 cupcakes.
  • Bake according to package directions.

    Bake according to the box directions. Once baked, completely cool cupcakes.
  • Soak frozen strawberries in rum.

    While the cupcakes are baking take the frozen strawberries in a bowl and cover with some rum. You will need enough berries for one on each cupcake. Let the berries soak in the rum and remember to stir them ever so often.
  • Beat butter for the icing.

    For the icing, beat the butter with an electric mixer for 1 minute.
  • Add a powdered sugar a little at a time.

    Add a little confectioners' sugar at a time beating as you go. Start with 6 cups of confectioners' sugar.
  • Add strawberry daiquiri mix and rum.

    Mix 1/4 cup strawberry daiquiri mix and 1/2 cup rum. Add it slowly to the mixture beating as you go.
  • Add more powdered sugar if necessary.

    If you want it a little thicker, you can add more powdered sugar but it should be thick and creamy.
  • Pipe the frosting.

    Fill an icing bag or a resealable gallon-size plastic bag with icing. Once the cupcakes are cooled completely, frost each cupcake. If using the resealable bag, cut the tip off of one corner to make a small hole.
  • Top with a strawberry.

    Right before serving add the rum-soaked strawberries.

    If you are making these and want to make them child-friendly, replace the 1/4 cup rum in the cake with 1/4 cup water and the 1/4 cup rum in the icing with 1/4 cup milk.
