Ingredients For strawberry-coconut/chocolate cupcakes

  • CUPCAKE
  • 1 box
    strawberry cake mix (+eggs and oil for recipe)
  • FROSTING
  • 1/4 stick
    butter, softened
  • 1/2 pkg
    cream cheese, softened
  • 1/2 tsp
    pure vanilla extract
  • 1-2 c
    powdered sugar
  • TOPPING
  • mini chocolate chips
  • shredded coconut, sweetened

How To Make strawberry-coconut/chocolate cupcakes

    Prepare strawberry cupcakes as directed; cool.

    Mix butter and cream cheese until well mixed; add vanilla. Slowly add powered sugar about 1/4 cup at a time until frosting reaches desired thickness/stiffness.

    Pour mini chocolate chips and coconut into separate plates.Lightly frost cooled cupcakes; dip frosted cupcakes into either the chocolate chips or coconut - roll cupcakes in toppings until well covered.
