Ingredients For strawberry banana cupcake w/orange blossom banana frosting

2 cflour

1/4 csugar

2 tspbaking powder

1/2 tspsalt

1egg

3/4 cmilk

1/3 cvegetable oil
-
2medium bananas, very ripe, mashed
-
1 1/2 cstrawberries, diced
- FROSTING:
-
4 ozcream cheese, room temperature
-
1 Tbspunsalted butter, room temperature
-
1/4 csugar
-
1very ripe medium banana
-
1/2 tsporange blossom essence
How To Make strawberry banana cupcake w/orange blossom banana frosting

1Heat oven to 375 degrees. Prep muffin tin with liners. Beat all ingredients together except the bananas and strawberries in a large bowl, with a mixer on low speed, until blended.

2Beat in bananas on medium speed for 2 minutes. Stir in the strawberries.

3Pour the batter into the prepped pan and bake for 20 to 25 minutes. Do a toothpick test, and if it comes out clean, it's done.

4Remove from the oven to a cooling rack for 10 minutes before removing the cupcakes from the muffin tin.

5FROSTING: With a mixer, beat cream cheese and butter in a medium bowl until light and fluffy. Add sugar and beat till well blended. Beat in banana and orange blossom essence, set aside.

6Frost or pipe when the cupcakes are completely cooled.
