The amaretto really makes this recipe great... at least *I* think so. ;)

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 2 tablespoons unsalted butter at room temperature
  • FILLING INGREDIENTS
  • 2 pounds cream cheese, softened
  • 1 cup heavy cream
  • 6 - eggs
  • 3 tablespoons lemon juice
  • 1/2 teaspoon brandy
  • 1 cup sour cream
  • 1 tablespoon vanilla extract
  • 2 tablespoons all purpose sifted flour
  • 1 cup strawberries, sliced
  • TOPPING INGREDIENTS
  • 1 cup amaretto liqueur
  • 1 tablespoon sugar
  • 1/2 cup strawberries, sliced

How To Make strawberry amaretto cheesecake

  • Step 1
    In a small mixing bowl, combine the crumbs, sugar and butter.
  • Step 2
    Blend well with fingers, fork or pastry blender.
  • Step 3
    Press onto the bottom of a well-buttered springform pan.
  • Step 4
    Chill for 30 minutes.
  • Step 5
    FILLING: In a large bowl, beat the cream cheese, sugar and cream until smooth.
  • Step 6
    Add the eggs, one at a time, making sure that the mixture is smooth and creamy.
  • Step 7
    Fold in the strawberries.
  • Step 8
    Pour mixture into the chilled pan and bake in a pre-heated 425 degree oven for 15 minutes, then reduce the temperature to 275 and continue to bake for 1 hour.
  • Step 9
    Transfer to a wire rack and allow to cool for 3 hours.
