My mother made this many summers while I was growing up. She would make large batches of them and freeze them. I have eaten other people's zucchini bread over the years, but none were as moist or yummy as mom's. I hope you try it and enjoy it as much as I always did. I think I'm going to make some myself! Ingredients For spiced zucchini bread

1 stickbutter or margarine

1 csugar

2eggs
-
1 3/4 cflour

1/2 tspsalt

1/2 tspbaking powder

1/2 tspnutmeg

1 czucchini (raw, finely grated, unpeeled; packed but not too tightly)

1/2 cwalnuts
-
1 tspvanilla
How To Make spiced zucchini bread

1Cream butter and sugar together. Beat in eggs. Combine dry ingredients in a seperate bowl. Stir half of the dry ingredients into the creamed mixture. Stir in the zucchini. Add the remaining dry ingredients. Add nuts and vanilla. Mix well. Pour into a greased loaf pan (9x5x3). Bake at 350 degrees for 50-60 min. Makes one loaf.
