spiced zucchini bread

My mother made this many summers while I was growing up. She would make large batches of them and freeze them. I have eaten other people's zucchini bread over the years, but none were as moist or yummy as mom's. I hope you try it and enjoy it as much as I always did. I think I'm going to make some myself! Ingredients For spiced zucchini bread

  • 1 stick
    butter or margarine
  • 1 c
    sugar
  • 2
    eggs
  • 1 3/4 c
    flour
  • 1/2 tsp
    salt
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    nutmeg
  • 1 c
    zucchini (raw, finely grated, unpeeled; packed but not too tightly)
  • 1/2 c
    walnuts
  • 1 tsp
    vanilla

How To Make spiced zucchini bread

  • 1
    Cream butter and sugar together. Beat in eggs. Combine dry ingredients in a seperate bowl. Stir half of the dry ingredients into the creamed mixture. Stir in the zucchini. Add the remaining dry ingredients. Add nuts and vanilla. Mix well. Pour into a greased loaf pan (9x5x3). Bake at 350 degrees for 50-60 min. Makes one loaf.
