Ingredients For spiced chocolate applesauce cake

2 1/2 cflour, sifted

2 lgegg white

1 tspvanilla extract

1/4 cbutter, softened

1/2 cpowdered sugar, well sifted

2 ozchocolate, unsweetened
- FROSTING INGREDIENTS

1/3 cwater, boiling
-
1 cbuttermilk
-
1 capplesauce
-
1 tspvanilla extract

2 lgeggs
-
2 csugar
-
3/4 cvegetable shortening
-
1 tspsalt
-
1 tspcinnamon, ground
-
2 tspbaking soda
-
1/2 ccocoa
-
1 cpowdered sugar, well sifted
How To Make spiced chocolate applesauce cake

1Sift together flour, baking soda, cinnamon and salt; set aside.

2Cream together the shortening and sugar in a mixing bowl until light and fluffy, using an electric mixer at medium speed; add eggs, one at a time, beating well after each addition.

3Blend in vanilla and applesauce.

4Add dry ingredients alternately with buttermilk to creamed mixture, beating well after each addition.

5Beat in boiling water - (Batter should be thick.)

6Pour batter into greased and waxed paper-lined 13 x 9 x 2-inch baking pan; bake in preheated 350 oven for 1 hour or until cake tests done.

7Cool 10 minutes in pan on rack.

8Remove from pan; cool on rack.

9When cake is cooled, spread with Chocolate Fluff Frosting and cut in squares.

10CHOCOLATE FLUFF FROSTING: Melt chocolate over hot water; cool to room temperature.

11Blend together confectioners' sugar, butter, melted chocolate and vanilla in a bowl and beat until smooth.

12In another bowl, beat egg whites until soft peaks form, using an electric mixer at high speed.

13Gradually beat in 1 cup sifted confectioners' sugar, 2 tablespoons at a time, until egg white mixture is glossy and stiff.

14Fold in chocolate mixture into the beaten egg whites.
