spiced apple cake

I took a few notes and combined a few recipes to come up with this. This cake taste more "muffin like" than "cake like" as it is not overly sweet. I make it as a cake in a 9x13 pan, but you could also do it in muffin tins or in bread pans. Goes great with vanilla ice cream, coffee, and/or tea.

Ingredients For spiced apple cake

5apples (cortland, macintosh, or empire)

2 Tbsplemon juice

1 Tbsppumpkin pie spice

2 Tbspsugar

1 1/2 cflour

1 1/2 calmond meal
-
1 Tbspbaking powder

1/2 tspsalt

1 csugar

1/2 ctruvia
-
1 cbutter, room temperature

4eggs
-
1 tsppure vanilla extract

1 tspalmond extract

1/4 cchai tea
-
1/4 cwhisky, or more chai tea if you prefer not to use whisky

1/2 tspcinnemon

1/2 tsppumpkin pie spice
How To Make spiced apple cake

1Peel, core, and cut apples into very small cubes. Mix apples in a large bowl with lemon juice, pumpkin pie spice, and sugar. Set aside.

2Preheat oven to 350. Mix flour, almond meal, baking powder, and salt in a small bowl. Set aside

3Cream together butter, sugar, and truvia.

4Add eggs, vanilla extract, almond extract, chai tea, and whisky to butter mixture. Mixture will be lumpy.

5Add flour mixture to egg mixture 1/2 cup at a time. Mix until well blended.

6Add apples to cake mixture, fold apples in carefully until just mixed.

7Pour cake mixture into a well greased 9x13 pan (alternatively, you can use muffin tins or bread pans).

8Mix the remaining sugar, pumpkin pie spice, and cinnamon in a small bowl. Sprinkle mixture over cake.

9Bake at 350 for 1 hour to 75 minutes, or until toothpick comes out clean.
