special occasion 3 layer cake w/sugar free frostin
I created this recipe to be used as a SPECIAL OCCASION DESSERT, for any one that cannot eat a wheat based dessert, or that may be diabetic, it is lower in sugar than a typical cake, because it is made with a zero calorie sweetener. I even made the SUGAR FREE FROSTING with a deep dark cocoa. Something that is not always easy to find. The nutrition analysis does include the frosting. It is not a dessert that you can have everyday, but for that VERY SPECIAL PERSON IN YOUR LIFE, that you want to impress. My neighbors mom thought this was the best Sugar Free dessert she had ever eaten.

- DARK CHOCOLATE CREAM CHEESE FROSTING

1 lbcream cheese, softened

1 stickbutter, softened
-
4 Tbspdark chocolate cocoa
-
1 1/4 csplenda
-
1/4-1/3 cheavy whipping cream, as needed for spreading consistency

2 tsplorann raspberry emulsion, or extract
- CAKE BATTER

1 1/2 calmond flour
-
1/4 ccoconut flour
-
1 1/2 cground flax seeds
-
2 1/2 csplenda
-
1 1/2 Tbspbaking powder
-
1/2 tspsalt
-
1 1/2 cevaporated milk
-
1/4 cextra virgin olive oil
-
8 ozunsweetened applesauce (1 cup)

4 lgeggs, room temperature

1 Tbsplorann raspberry emulsion
How To Make special occasion 3 layer cake w/sugar free frostin

1Preheat oven to 350 degrees F. You will need 3 eight inch cake pans for this cake. Add dry ingredients to one bowl almond flour, ground flax seeds, coconut flour, salt, baking powder, & baking soda, whisk and set aside till needed.

2In a second larger bowl add eggs, strawberry emulsion, olive oil, applesauce & milk. Beat to blend together.

3Now add 1/3 of the dry mixture into the wet, beat till blended, & repeat 2 additional times, until cake batter is fully blended together.

4Spray each cake pan with bakers joy, or grease with butter, and dust lightly with flour. Divide cake batter evenly between the 3 pans.

5Bake in preheated 350 degree F.oven for 25-30 minutes or until cake pulls away from sides of pan. Allow to cool for 10 minutes then invert onto a wire rack & cool completely.

6Blend Zero calorie sweetener, with cocoa. Then sprinkle over butter and cream cheese in a medium bowl & beat till blended together.

7FROSTING: Add the softened cream cheese, & butter to a medium size bowl.

8Now start with about 1/4 cup heavy whipping cream & teaspoon of emulsion. Beat till blended together & frosting is creamy & smooth, add additional 1-2 tablespoons whipping cream for a thinner spreading consistency.

9Now add first cooled cake to cake platter & spread with frosting, then top with second & third layer & repeat with frosting.
