sourdough chocolate cake with fudge icing
My sourdough is over 14 years old and it just gets better and better every year. I found this recipe in a cookbook: "Alaska Sourdough: The Real Stuff By A Real Alaskan" by Ruth Allman ISBN-13: 978-0-88240-085-3. The sourdough cake recipe did not come with an icing recipe, so I used a tried and true old fashioned cooked icing recipe that I have been using for years. It reminds me a lot of a hot fudge sundae cake. If chocolate is your bag....you better pinch this. You can use dark chocolate if you like...it will be even richer...I bet this would be great with cherry pie filling on top!

- FOR THE CAKE:

1 csourdough starter

1 csugar

1/2 ccooking oil

2eggs

1 cmilk

2 tspvanilla

3squares, chocolate (melted)

1/4 ccocoa powder

1/2 tspsalt

1 tspsoda

1 tspbaking powder

1 c****flour (if the starter is too thin
- FOR THE ICING:

1 1/2 csugar

1/2 cbutter
-
3 1/2 Tbspcocoa powder

1/2 cwater
-
1 tspvanilla ***add after cooking the icing
How To Make sourdough chocolate cake with fudge icing

1Preheat oven to 350 F. Grease 2 9" aluminum tins. To sourdough starter, min in sugar, oil and eggs.

2Add milk and vanilla. Add melted chocolate and cocoa powder. Stir well but do not beat.

3Add salt, soda and baking powder last. ***IF NEEDED: Add flour to get a cake batter consistency.

4Bake cake 30-50 minutes (until cake comes out clean when tested).

5While cake is baking, make the icing.

6Bring the sugar, butter, cocoa powder and water to a boil. Boil 5 minutes or until icing is at the soft ball stage. Remove from heat and stir in vanilla.

7Pour or spoon over cake.
