My aunt used to make this cake and still does on special nights when her nephews need comfort food. I am including the recipe card image, showing her original handwriting.

Ingredients For sour cream coconut cake

10 ozfresh or frozen coconut

12 ozsour cream

1-1/4 csugar (can use granulated or confectioner's)

1 tspvanilla flavoring

1 boxduncan hines yellow cake mix
How To Make sour cream coconut cake

1Mix together the coconut, sour cream, sugar and vanilla. Chill overnight.

2Bake cake per box directions, using 2 layer pans.

3Spread frosting on layers, top and sides of cake. Cover and chill for at least 5 days before cutting.
