Ingredients For so simple coconut cake...

  • 1 c
    butter, room temperature
  • 2 c
    sugar
  • 4
    eggs, separated
  • 1/2 tsp
    vanilla extract
  • 1/2 tsp
    lemon extract
  • 3 c
    all purpose flour, sifted
  • 3 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1 c
    coconut cream filling
  • 1 can
    fluffy white frosting
  • 1 1/2 c
    coconut, shredded
  • 3/4 c
    milk

How To Make so simple coconut cake...

    Heat oven to 350F.Lightly grease & flour 3 8-inch round cake pans.In a lager bowl cream the butter & sugar. Then add the egg yolks,vanilla & lemon extract.Beat everything very well.

    Then in a medium bowl sift the flour with baking powder & salt together.Then alternately with milk to the creamed butter mixture & mix well.

    In an other medium bowl oh high speed beat the egg whites until stiff peaks have form & fold into the batter. Pour into the cake pans & bake for 25 to 30 mins.

    Let cool thoroughly, cut in half & fill with coconut filling & then frost with with the frosting. Sprinkle top & sides with coconut.
