This recipe has been handed down for many generations,It is my favorite, I can remember my Grandma making this cake and slapping my fingers cause i wanted to eat all the cherries,Now i do the same with my granddaughter,our family loves this cake cause it's made from scratch..

1 cansliced pineapples, 20 ounce

3eggs, separated

1 cgranulated sugar

1 tspvanilla extract

1 call purpose flour

1 tspbaking powder

1/4 tspsalt

maraschino cherries
-
chopped pecans
How To Make skillet pineapple upside down cake

1Melt butter in a 10-inch iron skillet, Add brown sugar, mix well till sugar has dissolved into butter,drain pineapple, reserving 1/3 cup of juice, Arrange 8 pineapples over brown sugar & butter, sprinkle chopped pecans over pineapple, set aside. In a large mixing bowl, beat egg yolks till thick and lemon colored, Gradually add sugar, beating well, blend in vanilla and reserved pineapple juice, combine flour, baking powder, and salt, add to batter, beat well, In a small bowl beat egg whites on high speed till stiff peaks form, fold into batter, spoon into skillet, bake at 375 for 30 minutes, Let stand 10 minutes before inverting onto plate, place cherries in center of pineapple slices.
