Sis (Cheryl), my husband's sister, would make this colorful cake for his birthday every year. She was so proud to present this to him. I do not think he appreciated it being pink, but never complained. Because his birthday is coming up, I asked him if he would like me to make this cake for him..He said what cake? I don't remember Sis making me that cake? I told him that if he was at his sister's house, on his birthday, she would make one for him, lickity-split. When you get old, the first thing you loose is your memory or hearing?

Ingredients For sis's maraschino cherry cake

2 1/4 cflour

1 1/2 csugar

3 1/2 tspbaking powder

1 tspsalt

1/2 csnowdrift (crisco)

1/2 cmilk
-
1/2 cmaraschino cherry juice

1/2 tspalmond extract

4egg whites (unbeaten)
-
18maraschino cherries, chopped

1/2 cchopped nuts
How To Make sis's maraschino cherry cake

1Preheat oven 350 degrees. Mix dry ingredients together in bowl with wire whip. In a mixer, blend snowdrift, milk, cherry juice and almond extract. Beat 2 minutes. Add dry ingredients. Beat 2 minutes. Add egg whites. Beat 2 minutes. Fold in cherries and nuts. Pour into two greased and floured 8 or 9-inch cake pans.

2Put into oven and bake for 30 to 40 minutes. Cool in pans for 15 minutes; turn out on cake racks. Cool. Frost with cherry butter cream icing OPT: Decorate with maraschino cherries
