I call this Shara's cake, because this is my daughters favorite cake for her birthday that I make. It's so moist and yummy!

Ingredients For shara's triple layer carrot cake.

  • 3 lg
    eggs, beaten
  • 2 c
    sugar
  • 1 c
    plus 2 tbsp canola oil
  • 1-1/2 c
    cake flour
  • 1/2 c
    plus 1 tbsp whole wheat flour
  • 1-1/8 tsp
    cinnamon
  • 1 tsp
    nutmeg
  • 1 Tbsp
    baking soda
  • 1-1/2 c
    sweetened shredded coconut
  • 2 c
    grated carrot
  • 1 c
    plus 2 tbsp crushed, drained pineapple.
  • 1 c
    chopped walnuts
  • 1 c
    raisins
  • 1-1/2 stick
    butter, softened
  • 12 oz
    reduced-fat cream cheese, softened
  • 3 c
    powdered sugar
  • 1-1/2 tsp
    vanilla
  • 1 tsp
    cinnamon

How To Make shara's triple layer carrot cake.

    Heat oven to 350. Spray 3- 8" round cake pans w/ cooking spray. In bowl, w/ mixer on high, cream eggs, sugar and oil until thick and creamy, about 5 mins. Sift together in another bowl, flours, cinnamon, nutmeg and baking soda.

    Slowly add 1/3 of the dry mix into egg mix, beat well. Repeat w/ remaining dry mix, beating well after each addition. One at a time, fold in coconut, carrots, walnuts and raisins.

    Divide batter evenly among pans. Bake 40-45 mins, or until a toothpick inserted in center comes out clean. In bowl, cream butter and cream cheese until smooth. Add vanilla and cinnamon. Slowly beat in powdered sugar until smooth and spreadable. Frost cooled cakes.
