I call this Shara's cake, because this is my daughters favorite cake for her birthday that I make. It's so moist and yummy!

Ingredients For shara's triple layer carrot cake.

3 lgeggs, beaten

2 csugar

1 cplus 2 tbsp canola oil

1-1/2 ccake flour
-
1/2 cplus 1 tbsp whole wheat flour

1-1/8 tspcinnamon
-
1 tspnutmeg
-
1 Tbspbaking soda
-
1-1/2 csweetened shredded coconut

2 cgrated carrot
-
1 cplus 2 tbsp crushed, drained pineapple.

1 cchopped walnuts
-
1 craisins
-
1-1/2 stickbutter, softened

12 ozreduced-fat cream cheese, softened

3 cpowdered sugar

1-1/2 tspvanilla

1 tspcinnamon
How To Make shara's triple layer carrot cake.

1Heat oven to 350. Spray 3- 8" round cake pans w/ cooking spray. In bowl, w/ mixer on high, cream eggs, sugar and oil until thick and creamy, about 5 mins. Sift together in another bowl, flours, cinnamon, nutmeg and baking soda.

2Slowly add 1/3 of the dry mix into egg mix, beat well. Repeat w/ remaining dry mix, beating well after each addition. One at a time, fold in coconut, carrots, walnuts and raisins.

3Divide batter evenly among pans. Bake 40-45 mins, or until a toothpick inserted in center comes out clean. In bowl, cream butter and cream cheese until smooth. Add vanilla and cinnamon. Slowly beat in powdered sugar until smooth and spreadable. Frost cooled cakes.
