This is very different from the sfinge you would get from an Italian bakery but that's what my mother-in-law called these delicious crullers. This is a borrowed photo.

Ingredients For sfinge

3 lbricotta cheese

8 lgeggs

2 1/4 csugar

4 cflour

7 tspbaking powder

1 tspvanilla extract
How To Make sfinge

1Mix all ingredients together. In a deep fat fryer or a deep pot, heat oil to 350-375. Drop dough by spoonfuls into hot oil and fry until golden. Drain on paper towels. Place several at a time in a bag of confectioners sugar and shake to coat.
