I begged this recipe from my German friend Sabine who is a wonderful cook. This is not at all your usual heavy cheesecake. It's light and delicious and there is always room for it.

Ingredients For sam's cheesecake

  • 24 oz
    cream cheese, room temperature
  • 24 oz
    sour cream
  • 5 lg
    eggs
  • 1 1/2 c
    sugar
  • 2 tsp
    vanilla extract
  • graham cracker crumbs

How To Make sam's cheesecake

    Beat cheesecake ingredients until light and fluffy
  • 2
    Coat springform pan freely with margarine (not butter) and graham cracker crumbs.

    Fill with cheesecake mixture.

    Bake 45 minutes at 375 and check for doneness. Let cool.

    ***If desired, you can add grated lemon peel to batter or a small can of crushed pineapple. I prefer it to be served topped with strawberries.
