I begged this recipe from my German friend Sabine who is a wonderful cook. This is not at all your usual heavy cheesecake. It's light and delicious and there is always room for it.

24 ozcream cheese, room temperature

24 ozsour cream

5 lgeggs

1 1/2 csugar

2 tspvanilla extract

graham cracker crumbs
How To Make sam's cheesecake

1Beat cheesecake ingredients until light and fluffy

2Coat springform pan freely with margarine (not butter) and graham cracker crumbs.

3Fill with cheesecake mixture.

4Bake 45 minutes at 375 and check for doneness. Let cool.

5***If desired, you can add grated lemon peel to batter or a small can of crushed pineapple. I prefer it to be served topped with strawberries.
