This one will really top your holidays off. A funny family story goes with this one. The first time my now daughter-in-law met my mother was at Christmastime, while she and my son were dating. Wanting to make a good impression and hearing about what a good cook "grandmother" was, she cleaned her plate and when asked which one of the dozen desserts she wanted, she chose Rum Cake. The rest of us knew there was quite a bit of rum in it, so we chose something else. My mother was a definite teetotaler in every way, except for her rum cake. When she took the first bite, her eyes got SOOOO big, the rest of us just tried to hold the laughter in. (She finished her cake, too.)

Ingredients For rum cake

  • 1
    box yellow cake mix
  • 1
    cup chopped pecans (or walnuts)
  • 4
    eggs
  • 1/2
    cup cold water
  • 1/2
    cup oil
  • 1/2
    cup dark rum
  • 1 3/4
    ounce package instant vanilla pudding mix
  • glaze:
  • 1/4
    cup water
  • 1
    cup sugar
  • 1/2
    cup rum
  • 1
    stick butter

How To Make rum cake

    Preheat oven to 350 degrees. Mix cake mix, eggs, water, oil, pudding mix and rum. Beat until well mixed. Grease & flour a tube or bundt pan. Sprinkle pecans in the bottom of pan. Pour batter over pecans. Bake 1 hour. Punch holes in cake and drizzle glaze over all. Glaze: Melt butter in saucepan. Stir in water & sugar. Boil for 5 minutes, stirring constantly. Remove from heat and stir in rum. Drizzle over cake.
