I often take this to pot lucks and it is a family favorite. This is great as a coffee cake or a dessert. I like to use a tart apple for this cake (Granny Smith or Northern spy's are best). For a richer cake you can use butter instead of shortening. This cake freezes well and is even better after the flavors mingle. You can leave the nuts off, but we think it is best with them.

1 cshortening

1 cwhite sugar

1 cbrown sugar

2eggs
-
1 cbutter milk or sour milk

1 tspsoda
-
2 cflour
-
1 tspbaking powder

1/2 tspsalt

1 1/2 tspcinnamon

2 cpeeled & chopped apples

1/2 cchopped nuts
- TOPPING

1/4 csugar

1/2 tspcinnamon

How To Make roman apple cake

1Cream together shortening and sugars.

2Beat in eggs.

3Beat milk with soda mixed in, add to beaten mixture.

4Sift together flour, baking powder, salt and cinnamon and add to creamed mixture.

5Fold chopped apples and nuts into cake mixture. Pour into oblong 9" X 13" greased and floured pan.

6Mix together topping ingredients. Sprinkle over top of cake.

7Bake at 350 degrees for 55 minutes
