From Land O'Lakes Recipe Collection Top 50, August 2000. 1 serving = 400 cal., 6 g. protein, 61 g. carbs., 16 g. fat I thought this was good. My daughter said it was too fake tasting, when in reality it was too real tasting. She didn't like the bitterness of the chocolate in this "made from scratch" cake. I thought with the sweet topping and the slight bitterness of the cake balanced out quite nicely. I thought this was better after being in the refrigerator for a while as well.

1/2 cunsweetened cocoa

1/2 cbutter, softened

1 1/4 tspbaking powder

2 cminiature marshmallows

1/4 cbutter

3 ozpackage cream cheese

1 ozunsweetened chocolate

2 Tbspmilk

3 cpowdered sugar

1 tspvanilla

1/2 ccoarsley chopped salted peanuts
How To Make rocky road chocolate cake

1Heat oven to 350*. Combine all cake ingredients in large mixer bowl. Beat at low speed, scraping bowl often, until all ingredients are moistened. Increase speed to high. Beat, scraping bowl often, until smooth (1-2 minutes).

2Pour batter into greased and floured 13x9 baking pan. Bake for 30-40 minutes or until toothpick inserted in center comes out clean. Sprinkle with marshmallows. Continue baking 2 minutes or until marshmallows are softened.

3Meanwhile, combine 1/4 cup butter, cream cheese, chocolate and milk in 2 qt. saucepan. Cook over medium heat, stirring occasionally, until melted 8-10 minutes. Remove from heat, stir in powdered sugar and 1 t. vanilla until smooth. Pour over marshmallows and swirl together. Sprinkle with peanuts.
