Ingredients For ricotta chocolate chip cake

2 call purpose flour

1 tspflour

1/2 cmini semi sweet chocolate chips

2 Tbspmini semi sweet chocolate chiips

1 1/2 tspbaking powder

1/4 tspsalt

2eggs
-
1egg yolk
-
1 cwhite sugar

2 tspvanilla extract

1/2 colive oil

1 cwhole milk ricotta
-
confectioners sugar for dusting
How To Make ricotta chocolate chip cake

1Preheat oven to 350 degrees Spray a tube pan with baking spray Set aside

2Put 1/2 cup chocolate chips ina bowl and add 1 teaspoon of flour to them. Toss until chips are Well coated Set aside

3In a mixing bowl, whisk together 2 cups flour, baking powder and salt. Set aside.

4In a mixing bowl combine the eggs, yolk,sugar and vanilla. Beat with an electric mixer on medium speed until fluffy. Add in the oil and beat until combined. Beat in the ricotta until just incorporated.

5Beat in the dry ingredients until just incorporated. Do not over mix. The batter will be thick. Fold in the chocolate chips tossed in flour and spoon into the prepared pan

6Top with the remaining 2 tablespoons of chips

7Bake for 40 minutes. Cool and dust with confectioners sugar as desired.
