This is an easy scratch cake that is so moist and flavorful! Rhubarb is my favorite fruit. I have been making this recipe for approximately 35 years. Hope you'll try it. Enjoy!!!

Ingredients For rhubarb cake

  • 2 c
    flour
  • 1 tsp
    baking soda
  • 1/4 tsp
    salt
  • 1 1/2 c
    brown sugar, firmly packed
  • 1/2 c
    margarine
  • 1
    egg
  • 1 c
    milk
  • 1 tsp
    vanilla
  • 3 c
    rhubarb cut in small pieces
  • TOPPING
  • 1/2 c
    sugar
  • 1 tsp
    cinnamon

How To Make rhubarb cake

    Preheat oven 350' Mix flour, soda and salt. Set aside.

    In large bowl cream brown sugar and margarine until fluffy. On low speed beat in egg and vanilla. Mix flour mixture alternating with milk till all ingredients are well blended. Stir in rhubarb.

    Spray 9"x13" pan with cooking spray. Pour cake into pan. Mix sugar and cinnamon together. Sprinkle over the entire top of the cake.

    Bake for 40 minutes. Test with toothpick. Can be served warm or cold. Serve with ice cream, whipped topping or my favorite--half and half.
