This cake brings back an old childhood memory , when my mother use to make this cake in the summer time every year. This cake is very good served warm or cold with whipped cream or vanilla ice cream. This is a borrowed picture from the net.

Ingredients For rhubarb cake

2 crhubarb ; diced

1/2 cgranulated sugar

1/2 cshortening

1 1/2 cgranulated sugar

1egg

2 cflour

1 tspbaking soda

1 dashsalt

1 tspcinnamon

1 csour milk

1 tspvanilla extract

How To Make rhubarb cake

1Mix the diced rhubarb together with the 1/2 cup sugar ; set aside until the cake batter is all mixed up.

2Mix up the remaining ingredients to form the cake batter.

3Add the rhubarb mixture just before putting in the oven.

4Sprinkle cake with cinnamon and sugar mixture.

5Bake @ 350 deg. for 1 hour.
