I came across this recipe in one of my cookbooks from a local church around here. It's very different then your average cake....but so good! Anything with pineapple is good to me.....I love pineapple! *Google pic*

Ingredients For "refrigerator" cake

  • 2 c. crushed pineapple
  • 1/2 cup sugar
  • 1/2 cup pecans
  • 1/4 cup butter, melted
  • 1 tsp. vanilla
  • 3 cups crushed nilla wafers

How To Make "refrigerator" cake

  • 1
    Place a layer of crushed wafers in a greased refrigerator dish.

    Cover wafers with a layer of mixture.

    Add another layer of wafers.
  • 4
    Top with more mixture.
  • 5
    Ending with wafer crumbs on top.

    Place in refrigerator for a day or longer.
  • 7
    *Note* Serve with cool whip or ice-cream, and a cherry on top. You may substitute nilla wafers for graham crackers.
