My Mother-in law made this cake in the winter. It was my husbands'favorite.This was originally known as " Waldorf War Cake" as it was baked during WWI, when there was a shortage of granulated sugar and eggs.My husband liked chocolate icing, I like vanilla icing. They are both good.This cake is baked at 300 degrees

Ingredients For raisin cake

2 cfrimly packed brown sugar

2 Tbspshortening

2 cplus 1 teaspoon hot water divided

2 craisins
-
1 tspsalt
-
1 tspcinnamon, ground

1/4 tspcloves ground

1 tspbaking soda

3 call purpose flour
How To Make raisin cake

1Combine brown sugar, shortening, 2 cups of hot water, raisins, salt, cinnamon and cloves in a medium saucepan;Bring to boil over medium heat.

2Reduce heat;simmer for 5 minutes.Remove from heat;cool completely

3Dissolve soda in 1 teaspoon hot water; add with flour to cold raisin mixture.

4Pour batter into a greased 13"x9" baking pan

5Bake at 300 degrees for 45 minutes or until tests done.
