rainbow blondies

I just love blondies and have a wonderful collection of them. These blondies were made with M&M Candies, hence the name, "Rainbow Blondies". I made this for the kids for Halloween. We don't really let them go trick or treating anymore. So we take them to the Mall - and it was rockin'!!! Then we bring them home and have a little party for them. The flour can be swapped out for mochiko flour.

Ingredients For rainbow blondies

  • 1/2 c
    butter, softened
  • 1/2 c
    butter-flavored shortening
  • 1 c
    light brown sugar, packed
  • 1/2 c
    granulated sugar
  • 2
    eggs
  • 1 tsp
    vanilla extract
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    kosher salt
  • 2 1/2 c
    flour
  • 1/3 c
    sour cream
  • 1
    full bag of m & m's candy
  • 1 c
    macadamia nuts, chopped

How To Make rainbow blondies

    Heat oven to 350 degrees. Prep 9 x 13 pan with non-stick spray.

    Beat butter and shortening till blended. Add sugars and beat well. Add eggs, vanilla, baking soda, and kosher salt and mix, gradually mix in flour, then fold in the sour cream and fold in the candy and nuts.

    Bake for 20 to 25 minutes until the top is golden brown. Cool completely before cutting into squares.
