Love this cake great for a hot summer day with a glass of iced tea. Trick is to make it and put it in the fridge to get it really cold. I personally like it the longer it sits.

Ingredients For quick pineapple cake and icing

  • 2 tsp
    baking soda
  • 2 c
    all purpose flour
  • 2 c
    sugar
  • 1/2 c
    buttermilk
  • 20 oz
    crushed pineapple juice included
  • 1 tsp
    vanilla extract
  • 2 lg
    eggs slightly beaten
  • 1/2 c
    chopped pecans
  • 1/2 c
    coconut
  • ICING:
  • 8 oz
    cream cheese, room temperature
  • 1/2 c
    butter soften
  • 1 c
    powdered sugar
  • 1 tsp
    vanilla extract

How To Make quick pineapple cake and icing

    Preheat oven to 350 and spray a 9x13 pan with baking spray. Cake: Sift together soda and flour Do not skip this step it does make a difference. Mix the sugar , pineapple with juice, buttermilk, eggs , pecans, coconut and vanilla with wooden spoon (no need for mixer) Stir in sifted flour mixture until combined. Poor in prepared pan and bake 25-30 minutes.

    Icing Cream all ingredients together and poor over the cake while still warm, refrigerate until cold.
