Love this cake great for a hot summer day with a glass of iced tea. Trick is to make it and put it in the fridge to get it really cold. I personally like it the longer it sits.

1/2 cbuttermilk

20 ozcrushed pineapple juice included

2 lgeggs slightly beaten

1/2 cchopped pecans

1/2 ccoconut
- ICING:

8 ozcream cheese, room temperature

1/2 cbutter soften

1 cpowdered sugar

1 tspvanilla extract
How To Make quick pineapple cake and icing

1Preheat oven to 350 and spray a 9x13 pan with baking spray. Cake: Sift together soda and flour Do not skip this step it does make a difference. Mix the sugar , pineapple with juice, buttermilk, eggs , pecans, coconut and vanilla with wooden spoon (no need for mixer) Stir in sifted flour mixture until combined. Poor in prepared pan and bake 25-30 minutes.

2Icing Cream all ingredients together and poor over the cake while still warm, refrigerate until cold.
