My Aunt Beryl was a doctors wife. Her husband was head of St. Johns Hospital in Joplin, MO. Uncle Grant had a tendancy of bringing home unexpected guests for dinner. So, Aunt Beryl made up this dessert on the spur of the moment with the items she had on hand in her pantry. My children love the lemon cake and peaches recipe the best.

Ingredients For quick dessert

1/2 boxlemon cake mix

2 canlarge, sliced peaches

dollops of butter
How To Make quick dessert

1Drain peaches and save juice. Use 13 X 9 X 2 pan - spread peaches on the bottom. Sprinkle 1/2 box of lemon cake mix over the top of the peaches. Add saved juice and several dollops of butter. Bake at 425 for approximately 15-20 minutes. Until cake mix starts to lightly brown.

2Service hot with vanilla ice cream on top.

3Additional desserts: 1/2 box spice cake mix with 2 large cans fruit cocktail (same directions as with peaches) OR 1/2 box chocolate cake mix with 2 cans cherry pie filling (need to thin filling with a little bit of water). [Put filling in bottom of pan and follow directions with cake mix and butter.]
