This is supposed to be the only cake that Queen Elizabeth cooks. She doesn't do this often and when she does it's for a fund raiser. I'm sure it is a good draw in Buckingham Palace. The story goes that she used to provide the recipe with the cake to increase sales. See what you think. It looks good and sounds good. I will give it a try.

1 cchopped dates

1 tspbaking soda
-
1 cboiling water
-
1 csugar
-
1/2 cbutter, softened
-
1 lgegg
-
1 tspvanilla extract
-
1 1/2 call purpose flour
-
1 tspbaking powder
-
1/3 tspsalt
-
1/2 cchopped walnuts
- FROSTING ( YOU ONLY FROST THE TOP)

5 Tbspbrown sugar, firmly packed

5 Tbspcream

2 Tbspbutter, softened

1 cunsweetened shredded coconut
How To Make queen elizabeth cake

1CAKE: Preheat oven to 350 degrees F. Butter and flour a 9x13x2 inch pan AFTER lining it with parchment paper.

2Combine dates and baking soda, pour boiling water over them. Let the mixture stand.

3In a large mixing bowl, cream butter and sugar. Add egg and vanilla, and beat well. Add flour, baking powder,and salt; pour in date mixture and nuts, and mix all together well.

4Pour batter into pan. Transfer pan to the preheated oven and bake 25-30 minutes, until golden brown on top. Remove from oven and let stand.

5ICING: Mix all icing ingredients except coconut in a small saucepan. Bring mixture to a boil; boil 3 minutes, until thickened. Pour icing over cake and spread. Sprinkle shredded coconut on top.
