- CANDIED PECANS

1/2 cpecans, chopped

3 Tbspsugar
- CUPCAKES

1 boxyellow cake mix
-
1 ccanned pumpkin (not pie mix)

1/2 cwater

1/3 cvegetable oil
-
4eggs
-
1 1/2 tsppumpkin pie spice

1 cancream cheese frosting
How To Make *pumpkin spice cupcakes with candied pecans*

1Heat oven to 350 degrees.

2In a non-stick skillet, cook pecans and 2 tablespoons sugar on low heat, stirring constantly, for about 8 minutes. Spread pecans on wax paper and sprinkle with remaining sugar. Toss and set aside.

3In a large bowl, beat together cake mix, water, oil, pumpkin, eggs and pumpkin pie spice with electric mixer 30 seconds on low speed, then medium for 2 minutes.

4Put baking cups in each 24 regular size muffin cups. Divide mix evenly among cups (2/3 full). Bake 20-24 minutes. Cool completely and frost. Sprinkle pecans onto frosting and press in lightly.
