I often make this for Halloween treats or Trunk or Treat cake walks at my grandson's school. I divide the frosting and color it with food coloring deep Halloween colors in Orange, Purple, Yellow and White. It makes a colorful and seasonal cake for cake walks. It always goes before the others.

Ingredients For pumpkin pie cake

  • 1 box
    yellow cake mix
  • 1/2 c
    brown sugar
  • 1 tsp
    baking soda
  • 2 Tbsp
    cinnamon
  • 1/2 tsp
    ground ginger
  • 1/2 tsp
    ground nutmeg
  • 1 - 15 oz can
    pumpkin puree
  • 1 c
    vegetable oil
  • 4
    eggs
  • 1 c
    chopped pecans
  • 1 c
    raisins

How To Make pumpkin pie cake

    Preheat oven to 375

    Grease and flour baking pans (I use spray on baking pan spray and a bundt pan

    In a large bowl mix in first 5 ingredients to the cake mix
  • 4
    make a well in the center of the dry ingredients and add the pumpkin puree, oil and eggs. Beat on low speed till blended then on high speed for 4 minutes. Stir in pecans and raisins.

    Pour into prepared pan (s) Bake 50 minutes to an hour or until a toothpick comes out clean. Cool completely.

    Frost with one can of cream cheese frosting. (Or you can make homemade frosting if you prefer.)
