When any holiday is here, my MIL absolutely refuses to let me in her house with having this. She literally hoards this stuff. It is just too funny to watch her. Started making this 20 years ago when my son went to his first girl friends house for thanksgiving and ate it there. He loved it so much he came home with the recipe. Too funny. Everyone loves this stuff it is so addicting.

Ingredients For pumpkin delight

1box yellow cake mix

1egg

1stick butter, melted

1can, pumpkin puree (15 oz)

8 ozcream cheese, room temperature

2eggs
-
4 cpowdered sugar

dash of allspice, and pumpkin spice seasonings

1 tspvanilla
How To Make pumpkin delight

1Mix together, cake mix and egg and melted butter. Mixture will be like a cookie dough. Press evenly into a 12x9 pan. (At this point, pecans can be added if you desire) Just sprinkle down on top of dough and press lightly.

2TOPPING: Beat cream cheese till light and fluffy. Add pureed pumpkin and mix till there are no lumps. Add eggs, vanilla and butter and mix well. Slowly add the powdered sugar.

3Once it's all mixed in, pour evenly on top of dough. Bake in a preheated oven of 350º for 45 to 50 minutes. It will still be slightly jiggly in the middle. Don't overbake. Take out and cool completely.

4Much better if this can be refrigerated for a couple of hours.
