Ingredients For pumpkin delight

  • 1 3/4 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter or margarine, melted, 1 stick
  • 8 oz. cream cheese, softened
  • 2 eggs, beaten
  • 3/4 cup sugar
  • 2 pkg, 3 oz. each, vanilla instant pudding mix
  • 3/4 cup milk
  • 2 cups mashed cooked pumpkin or canned pumpkin, 16 oz
  • dash ground cinnamon
  • 1 container frozen whipped topping, thawed, 8 oz

How To Make pumpkin delight

  • 1
    Mix graham cracker crumbs, 1/4 cup sugar and melted butter in bowl and mix well. Pres over the bottom of a 9 x 13 inch baking dish. Beat cream cheese, eggs, and 3/4 cup sugar in mixing bowl until light and fluffy. Spread over prepared crust. Bake in preheated 350 oven for 20 minutes. Remove to a wire rack and let cool completely. Beat pudding mix and milk in mixing bowl at medium speed for 2 minutes. Add pumpkin and cinnamon and mix well. Stir in 1 cup of the whipped topping. Spread over cooled baked layer. Spread remaining whipped topping over pumpkin layer. Chill until ready to serve. Serves 15 source: Marshes to Mansions
