pumpkin cupcakes w/pumpkin mousse frosting
This is a easy semi-homemade cupcake. I used my favorite seasonal pudding and replaced the oil with cinnamon apple sauce. Pudding is in the frosting too. I wait for this pudding to come out and stock up. I love it, I use in many recipes, and when pumpkin season is over I make my own pumpkin spice creamer. (its a favorite in my home!!

1box yellow cake

13oz box pumpkin spice pudding

3/4 cmilk
-
1 ccinnamon applesauce
-
4eggs
- FROSTING

1container whipped topping

How To Make pumpkin cupcakes w/pumpkin mousse frosting

1Wisk wet ingredients in bowl. In another bowl stir together cake mix and pudding mix. Blend wet ingredients into dry. Blend for 2-3min till lumps are gone.

2Fill cupcake papers 3/4 way full (i use icecream scoop) Bake at 350 for 15-17min. Let cool.

3FROSTING Wisk milk into pudding. Let set for 5min in refrigerator. Fold in whipped cream. Frost or pipe frosting to each cupcake. Decorate with candies or dust with cinnamon sugar.
