Sonna, a teacher's aide at Woodham High School, used to bake this cake for us at Thanksgiving every year. It's easy and oh, so very good! Of course, I like almost any cake with cream cheese frosting, and this one has it.

Ingredients For pumpkin cake

4eggs

2 csifted all-purpose flour

2 tspbaking soda

1/2 tspsalt

2 tspcinnamon

1/2 tspginger

1/4 tspnutmeg
-
2 cgranulated sugar

1 cvegetable oil
-
1 can(15-oz.) pumpkin (not pumpkin pie mix!)
- CREAM CHEESE FROSTING

1 pkg8-oz. cream cheese, softened

3 csifted confectioners' sugar

1 tspvanilla extract
-
1 cchopped pecans
How To Make pumpkin cake

1Sift all dry ingredients together.

2Beat eggs with sugar until fluffy. Add oil, then pumpkin.

3Add sifted dry ingredients and stir just until mixed.

4Bake in a greased and floured tube pan at 350 for about an hour.

5You can also bake this cake in layers. They'll take less time. Since I've never baked it in layers, I don't know exactly how long, though.

6Cream Cheese Frosting: Mix all ingredients together with an electric mixer and spread all over cake.
