I found this recipe in a Southern Cookbook. Have not tried it but it sounds very good.

Ingredients For pumpkin cake

  • 2 c
    sugar
  • 2 c
    flour
  • 1/2 c
    vegetable oil
  • 1 - 16 oz
    can pumpkin
  • 4
    eggs, beaten
  • 1 tsp
    salt
  • 2 tsp
    soda
  • 1/2 c
    flaked coconut
  • 1/2 c
    pecans, chopped fine

How To Make pumpkin cake

  • 1
    Combine sugar, pumpkin, oil and eggs. Beat 1 minute at medium speed. Add flour, salt, soda and cinnamon.

    Beat another minute at medium speed.

    Stir in pecans and coconut.

    Pour into two 9 inch cake pans (greased and floured).

    Bake at 350 degrees for 25-30 minutes.

    FROSTING: 1/2 cup margarine 1-8 oz. cream cheese 1 box powdered sugar 2 teaspoons vanilla 1/2 cup pecans 1/2 cup coconut Combine margarine and cream cheese, beat until light and fluffy. Add sugar and beat well. Add pecans and coconut. Spread over cooled cake.
