pumpkin bars
(5 ratings)
If you are planning a Halloween Party or will be going to friends for fall activities then this recipe will work well for you. It makes 48 bars. They're rich so a little goes a long way. This is a favorite around here and has been since the boys were young. Now they're older and out of the house so I guess I'll have to eat all 48 myself.

-
2Next in large bowl, beat the cream cheese until fluffy.Gradually beat in condensed milk, the remaining 2 eggs, pumpkin and remaining pumpkin pie spice, and the salt. Mix well. Pour over crust mixture. Sprinkle with nuts. Bake 350 degrees for 30-35 minutes. Don't overbake. Bake until set using a toothpick for doneness. Cool completely and cut into 48 bars. Store in fridge when not using.

3NOTE: It would be good with 1/2 cup chocolate chips sprinkled in with the 1 cup chopped nuts. I believe chocolate slows down the age processing. I mean, there's no proof of this but why take chances? {:
