My grandmother always made this icing and put it on an angel food cake for my father who was diabetic. It is low sugar, super easy and great for a little something cold but sweet on a hot summer day. Butterscotch is my personal favorite

Ingredients For pudding icing

  • 1 box
    sugar free instant pudding
  • 1 c
    milk
  • 8 oz
    cool whip (thawed)
  • 1 box
    cake mix, any flavor

How To Make pudding icing

    Mix and bake cake mix as directed on box, cool completely

    In a medium to large bowl (need enough room for cool whip) mix the pudding with only 1 cup of milk and put it in fridge to set up

    Combine 8 oz cool whip with pudding
  • 4
    Ice cake (or cupcakes) with pudding icing. Iced cake must be stored in the fridge!
