I found this recipe in a cookbook my Momma put together at least 25 years ago. There is no listing as to where it came from. Actually the recipe was a little vague to I just tweeked to be mine

Ingredients For poor man's raisin cake

  • 1/3 c
    milk
  • 1 c
    raisins
  • 2 c
    water
  • 1 tsp
    baking soda
  • 2 Tbsp
    rounded of shortening aka crisco
  • 1 c
    sugar
  • 2 c
    flour
  • 1 tsp
    baking powder
  • 1 pinch
    salt
  • 1 pinch
    all spice
  • 1 pinch
    nutmeg
  • 1 pinch
    cinnamon
  • 1 pinch
    ginger

How To Make poor man's raisin cake

  • 1
    cook water and raisins down to 1C juice. Add soda and shortening to liquid while warm. Add sugar and flour (enough to make a light batter) but not stiff. Then add Baking powder, salt allspice, nutmeg, cinnamon and ginger. Mix Well and bake 350 degrees for about 25 min. Depending on your oven.
