MY YOUNGER BROTHER "PUDGY" LOVED TO COOK. THIS WAS ONE OF HIS RECIPES. HE WOULD BAKE THEM AND GIVE THEM AWAY TO ALL HIS FRIENDS AT CHRISTMAS. HE HAS PASSED AWAY NOW BUT I MAKE THIS CAKE EVERY CHRISTMAS IN HIS HONOR. IT NOT ONLY TASTE GOOD AND IS A LITTLE OLD FASHIONED BUT IT JUST MAKES YOU FEEL GOOD.

Ingredients For poor man's cake

  • 2 c
    Raisins
  • 4 c
    Water
  • 2 Tbsp
    Shortening
  • 4 tsp
    Baking Soda
  • 2 c
    Sugar
  • 2 tsp
    Cinnamon
  • 1 tsp
    Salt
  • 2 c
    Pecans (chopped)
  • 4 c
    Flour
  • 2 tsp
    Nutmeg
  • 1 tsp
    Cloves

How To Make poor man's cake

    Pour Raisins in the water and boil mixture down until you have 2 cups of liquid. Add the shortening and baking soda and stir until mixed good. Let this cool before adding to the dry mixture.

    Grease and flour Bundt pan or tube pan or you can use only Pam spray. (I use Pam). Pour cooled Raisins and Juices mixture into the Dry Ingredients and Mix well. Pour batter into the prepared pan and bake at 300 to 315 degrees for 1 hour.
