Who would have thought we would be eating baby food as adults??? You have to try this to believe how good it is. My niece, Kristen, gave me this recipe when she was a little girl. She wrote it out for me :-)

Ingredients For plum pound cake

  • 2 c
    self rising flour
  • 2 c
    sugar
  • 1 c
    vegetable oil
  • 3
    eggs
  • 2 jar
    baby food plums (small jars)
  • 1 c
    chopped nuts (i use pecans)
  • 8 oz
    cream cheese-softened
  • 2 Tbsp
    butter
  • 1 box
    powdered sugar
  • 1 tsp
    vanilla extract
  • PREHEAT OVEN 325 DEGREES

How To Make plum pound cake

    Mix together flour, sugar and oil using an electric mixer. Add eggs, baby food and nuts, mixing well. Pour into a tube pan. Bake at 325 degrees for 1 hour. Let cake cool completely.

    Make the icing by mixing cream cheese and butter until smooth using an electric mixer. Slowly add the powdered sugar and vanilla. Ice the cake.

    **Note** may add some red food coloring to make the cake more vibrant.
