Ingredients For pistachio-pumpkin chocolate loaf

  • 1 c
    dried cranberries
  • 1 box
    german chocolate cake mix
  • 1/2 c
    pumpkin puree
  • 1 tsp
    orange extract
  • 1/2 c
    unsalted, chopped pistachios

How To Make pistachio-pumpkin chocolate loaf

    Heat oven to 350. Spray { 2 } 8-1/2" x 4-1/2" loaf pans w/ cooking spray. Place cranberries and enough water to cover in a microwave safe bowl. Let sit for 5 mins, drain.

    Microwave cranberries 2 mins, or until softened. In bowl, mix cake mix as directed on box. Add pumpkin puree and orange extract. Stir in cranberries and pistachios.

    Divide batter evenly between loaf pans. Bake 50 mins, or until a toothpick inserted in center comes out clean. Let cool.
