This is one of the most easy and yummy cake recipes you will ever make! Years ago (1986!) one of my dear nursing buddies gave me this recipe. For the frosting she called for 1 whole box of powdered sugar but i like the cream cheese frosting a little tart so I only add half a box. Although it is great to make the cake the day before serving, if you place it in the fridge for 1 hour before icing it is still a fast and easy desert for guests.

20 oz cancan of crushed pineapple with juice

2 csugar

2 cflour

2 tspbaking soda

1 tspvanilla

1 ccrumbled walnuts

8 ozcream cheese

1/2 cbutter

1/2 boxpowdered sugar

How To Make pineapple walnut cake

1heat oven to 350
-
2slightly beat eggs - add undrained pineapple, sugar, flour, baking soda, vanilla, and walnuts.

3pour into ungreased pan and bake for 25-30 minutes.

4This cake is very moist so do not remove from pan - place in refrigerator for at least an hour before frosting.

5Now make the frosting! Mix together cream cheese, butter, powdered sugar, and vanilla. (you can add a little milk if consistency is not what you like)

6This cake is best if made the day before serving!
