This recipe comes from my brother-in-law's dad. We were all getting together and he had brought this cake for us. Yum! I immediately asked for the recipe, he knew it by heart. The first time I made it I forgot to add the sugar - it came out horrible. We both had a good laugh from that!

This pineapple walnut cake is a simple dessert to whip up whenever a sweet craving hits. The cake is moist, dense, and has a tropical feel. We liked the crunch of the walnuts. They combine to create a wonderful flavor and texture combination. It's frosted with a creamy, sweet, tangy cream cheese frosting. We sprinkled additional chopped walnuts over the cake before serving.

Ingredients For pineapple walnut cake

  • 2 c
    all-purpose flour
  • 1/4 tsp
    salt
  • 1 tsp
    (heaping) baking soda
  • 2 c
    granulated sugar
  • 2 tsp
    vanilla extract, divided
  • 2 lg
    eggs
  • 1 can
    crushed pineapple, do not drain (20 oz)
  • 1 c
    walnuts, lightly chopped
  • 1 pkg
    cream cheese, softened
  • 1 stick
    softened butter
  • 1 c
    powdered sugar

How To Make pineapple walnut cake

  • Mix the flour, salt, and baking soda.

    Grease/butter a Bundt pan. Preheat the oven to 350 degrees F. Mix the flour, salt, and baking soda.
  • Add sugar, vanilla extract, eggs, and undrained pineapple.

  • Add walnuts.
